I had been prepared to skewer Alice Waters. Though I have eaten some of the best food I've ever encountered at her Berkeley restaurant Chez Panisse, and though I have generally tried to live by the gastronomic principles that she's become famous championing, and though I believe that the world would be better off in nearly every way if more people listened to her, there is a limit to what can be expected of us -- of me! -- and I wanted to tell her, Alice Waters, you just want too much.

van you're a man after my own heart! did i tell you i ate at the chez panisse cafe this summer? i think i'd fly to berkeley just to eat in the downstairs restaurant.
i feel like i have some inclination towards healthy (and organic) eating; although i'm not sure that this inclination is strong enough to fundamentally change my eating habits. what is more appealing about Alice's philosophy is the idea of a slower pace. enjoying the process of cooking and food shopping, taking time to chop the vegetables and cook the food is, for me, a sort of active meditation. i'm less interested in a mediation that removes your mind from reality than in one that allows you to appreciate more fully the joy of chopping vegetables...
